is placed on the fire until it is heated. You should also avoid leaving it on

bitter, and when it boils, this bitter taste increases even more than before,
and therefore it must be heated only for sterilization. Then it is removed
from the heat and sugar is added to it until it dissolves as desired, and then
left until it cools. Then it is filtered using a strainer with wide holes, and
there are some people who eat it without filtering it because it is eaten as it
is. It is then stored in the refrigerator. Care must also be taken not to
store doum juice for a long time because it is considered a beverage that
spoils quickly.
How to make dum with milk 1/4 kilo of crushed doum. 1/2 liter of water. 1
cup sugar. 1/2 liter of milk. Preparation steps:
Add two or three tablespoons of sugar, then put it in a pot on the fire, and
leave it for two or three minutes, depending on the intensity of the fire.
Until it caramelizes, it becomes like caramel, turning brown. Put the amount
of doum on it, then remove it from the heat and stir well, until it takes on a
caramel color. It brings out the moisture inside it. Pour 1/2 liter of water
over the mixture, then return it to the heat for one minute. Stirring until
the sugar dissolves completely. Then soak the dum in water for at least 4
hours, until it becomes soft. Then put it in the blender with the sugar and
milk until they are completely mixed, then filter it with a strainer, and serve
it cold.
