What are the Natural Vanilla Grades?
These pods can range in size from 5-22cm in length and are considered of a
higher quality when they are larger.
The seasoned vanilla pods are graded according to the required standards, they
fall into three main categories:
GRADE A - 6”- 8.7” (16 CM – 22 CM)
GRADE B – 5” – 6.5” (12.7 CM – 16.5 CM)
GRADE C – 3.5”- 5” (8.9 CM – 12.7 CM)

How to Identify Best Quality Vanilla
The best quality vanilla beans, no matter where they come from, are dark
skinned, soft and flexible. They should have a rich aroma. You should avoid
beans with very little aroma and beans that are smoky, brittle, dry or moldy.
When choosing vanilla beans, choose plump beans with thin skins to get as many
seeds as possible. To test, gently squeeze the beans between your fingers. The
pods should be dark brown, almost black in color, and flexible enough to wrap
around your finger without breaking. If the beans are hard, you can soften them
by dropping them into the liquid in your recipe.
