represents about 80% of all tea produced in Japan. Sencha green tea is lightly
steamed which is often enjoyed by Japanese as a refreshing beverage in daily

Natural Tea Plantation in Japan
We carefully select the finest quality organic green tea from Uji, Kyoto,
Japan. Wazuka Town in Uji, where tea fields spread in the mountains in the
southern part of Kyoto Prefecture. It has been a production area of the finest
Uji sencha for over 1,000 years. In the Edo period, the Uji green tea was even
delivered to the Imperial Palace.

Clear air, the natural conditions such as climate, soil and the fog from
Watsuka River bring out the umami of tea and it is said to be the most suitable
place for tea cultivation. Japanese organic green tea is very valuable as it
accounts for only 4% of the total tea production in Japan.
Qualified Tea Selection And Manufacturing Process
In order to ascertain the quality of tea leaves, the tea experts will
carefully check the quality of tea leaves from year to year. We choose the
finest quality of tea leaves and blend them with a good ratio. We mainly use
the 1st harvest tea of Yabukita and Saemidori. The tea leaves of sencha green
tea are cultivated in an open-air tea farm and it is grown under the sunlight
directly. Sencha Green Tea is a representative of Japanese green tea,
accounting for about 70% of the total distribution volume. The tea leaves grow
thick by absorbing plenty of sunlight, so the tea leaves are thick with a deep
green color and a deep rich aroma.
1. Tea Picking
In general, hand-picked sencha has 2-3 leaves per core, and
mechanically-picked sencha has 4-5 leaves per core. Freshly plucked fresh
leaves are still alive and breathing, so they generate heat.
2. Fanning And Humidifying
If the freshly picked leaves are left as they are, they immediately begin to
ferment and heat up. To prevent loss of quality and maintain freshness, the raw
leaves are fanned with damp air to help maintain their moisture and dissipate
the heat given off by the fresh leaves.
3. Steaming
To halt the oxidizing and fermentation action of enzymes on the leaves,
preserve their green color and remove the "grassy" odor, the tea leaves are
steamed using non-pressurized steam. The length of the steaming process is said
to be a key determinant in the tea's flavor, aroma and color. The steaming
process has a significant effect on the sencha's color and quality.
How to Enjoy Japanese Sencha Green Tea
For 3 servings)
1) Divide 180cc of boiled water into three cups and cool to 70-80°C.
Water temperatures cools 5-10°C each time when moved to a different vessel.
2) Add 2 tablespoons of tea leaves (About 10g) to the tea pot.
3) Pour the water (70-80°C) into the teapot.
4) Wait for the tea to brew. The tea leaves will turn soft and light green. It
will be ready in 45 seconds to 1 minute.
5) Put the tea little by little into each cup so that the flavor of the tea
will be even. It is important to pour to the last drop.
After the first brew, re-brew with hotter water and wait for less time, and
make sure to pour to the last drop every time.
You may adjust the amount of tea leaves and hot water used based on your
personal preferences.
Note to Brew Good Tea]
Use Soft Water and boil it in a kettle, allowing it to sit for 3-5 minutes to
remove any chlorine smell.
Using lower temperature water can bring out more amino acid (Umami Taste),
which makes tea tastes better and prevents the tea from becoming too astringent
or bitter.
It is hard to regulate the amount of tea needed to fit everyone’s taste, so
try several times to find your own perfect amount.
The lower the water temperature, the longer the tea takes to brew and turn
light green.

Cold Brew Sencha gives It a Mellow Taste
Cold Brew makes it difficult to extract bitter and astringent ingredients and
caffeine. Furthermore, vitamin C is not destroyed by heat.
Add 3g of tea leaves (1 heaped tsp) to 100ml of water and brew in the
refrigerator for 1 hour. If you are making a large batch, please brew for 3-6
hours.
Arrange Cold Brew Sencha by Adding Fruits
Green tea and lemons are both high in nutrition. It can be a great addition to
a healthy diet. When making cold brew sencha, you can make a refreshing lemon
sencha by soaking it with lemon slices and garnishing it with mint.
Other recommended varieties include peaches, pears, and blueberries.
