Description:
Piper longum, commonly called long pepper, Indian long pepper or thippali is a
flowering vine in the Piperaceae family, grown for its fruit, which is usually
dried and used as a spice and condiment. It is a slender climbing plant with
dark oval toothed leaves, in the shape of a heart. Inside each flower there are
tiny spikes that look like small sticks about the size of a poppy seed. These
spikes turn red when ripe and turn black when dried and are now ready to be
used as a spice. Long pepper has a similar, but more spicy taste than that of
Black pepper.
It is considered to be a rare kind of spice, but it is well-known in Indian
cuisine, where it's used for the preparation of pickles and very spicy dishes.
Long pepper can also be found in a lot of North African spice blends and in
Indonesian and Malaysian dishes.
It goes well with most types of meat, artichokes, asparagus, mushrooms,
various types of spicy cheeses and wines. In Thailand they put it in soups and
fries and in Ethiopia in stew. It also combines well with most spices and herbs.
