The Boletus edulis mushroom - is a meaty mushroom carrying an almost peppery
taste. Boletus edulis mushrooms are rare in that they keep both taste and
texture very well when they are cooked, and doesn't crumble or or disintegrate
like other mushrooms when cooked. Boletus edulis are great in soups, stews and
other slow cooked dishes.
Reconstituting Dried Boletus edulis: Rinse the mushrooms thoroughly and then
soak overnight in the refrigerator in water. Strain in a colander or strainer.
As an option include the soak water in cooking to help preserve flavor
intensity.
The Chanterelle mushroom (Cantharellus cibarius) is a meaty mushroom carrying
an almost peppery taste. Chanterelle mushrooms are rare in that they keep both
