Wild Luwak (Civet) Arabica coffee from Gayo - Aceh has a smooth and complex
taste with nuances of chocolate, caramel and tropical fruits, thanks to the
natural fermentation process in the digestive tract of wild luwak (civet). This
fermentation process involves enzymes in the digestive system of the luwak
which break down the proteins in the coffee beans, resulting in a decrease in
acidity and an increase in smoothness of taste. After the fermentation process,
the digested coffee beans are harvested, cleaned and carefully processed,
preserving the unique characteristics resulting from Aceh's geographical
conditions which include an altitude of 1,400-1,700 meters and a cool climate.
The combination of natural fermentation and the geographical environment
produces a rich, smooth and deep flavor profile, making wild Luwak coffee from
Gayo - Aceh are very special.
