Selection of water quality: It is best to use mountain spring water or pure
water, with the water temperature controlled at around 90℃, so as to fully
release the aroma and flavor of Zhengshan Xiao Seed.
Warming the tea cups: Rinse the tea utensils with hot water to raise the
temperature of the tea utensils, which will help to maintain the temperature of
the tea broth.
Pouring Tea: According to personal taste and the capacity of the tea set, put
in the right amount of Zhengshan Xiaojiao tea leaves. Generally speaking, 2-3
grams of tea leaves per 100ml of water.
Brewing: Inject hot water high into the tea set, so that the tea leaves are
fully tumbled, and then quickly pour off the first tea broth, this step is
called “tea washing”, which can remove the impurities and odors on the surface
of the tea leaves.
Re-brewing: continue to inject hot water, the steeping time depends on
personal taste, usually 10-30 seconds. Zhengshan Xiao Seed is not suitable for
long time steeping, otherwise it will affect the taste of the tea soup.
Dispensing: Pour the brewed tea soup into the fairway cup, and then into the
teacups separately, and enjoy.
Tasting: Zhengshan Xiao Seed tea broth is orange-red in color, with strong
aroma and mellow flavor, with unique pine smoke and osmanthus soup flavor.
